Chocolate caramel mousse

This is a real easy mousse to make.

Proportions for 3-4 people :

1 chocolate caramel bar (Nestlé brandname) of around 0,37 lb – 4 eggs – 1 pinch of salt.

Beginning by melting the chocolate bar in a « bain-marie » (means to pour water in a saucepan, then warm it, and put down a bigger bowl with the chocolate in it. Then gently blend the chocolate. This is in my opinion the best way to melt chocolate).

Once it’s done, let the melted chocolate to cool.

Separate the white and the yellow of the eggs. Whip up the eggwhites with a pinch of salt. Mix the egg yolks in the melted chocolate. Add a third of eggwhites and mix the blending. Then, you complete blending very carefully the rest of eggwhites into the chocolate.

Put the mousse into the fridge for 3 hours at least.
